  1. Get 1 cup kodo millet
  2. Get 1.5 liter milk

  7. Prepare 2 tsp custard powder
  8. Prepare 1/2 cup milk (for mixing with the custard powder)
  9. Take 2 pinches saffron
  10. Prepare 1/2 tsp cardamon powder
  11. Prepare 1/4 cup cashew nuts and raisins
  12. Take Some chopped pistachios for garnishing

I have started to experiment all millets variety and my recent one is the varagu/kodo millet ,check my recipe index for various millet recipes. Mostly i have made dosai with millets for a change i want to make idli with this one tried it and it was yummy can't see any difference from our regular rice idli. Koda Millet / Varagu is one of our traditional millet variety particularly of south India, though not much used nowadays probably as we forgot its value and health benefits it comes with. We reside abroad and we don't easily get millets here though it's available nowadays in some Indian stores.

Instructions to make Kodo millet custard pudding:
  1. Wash and soak the Kodo millet in water for 15 minutes and also soak the saffron in 2 tsp of milk.
  2. Heat a pressure cooker and put ghee in it and roast the cashew nuts and raisins till golden brown and keep them aside.
  3. Then in that ghee add water in it along with salt and then add the soaked millet in it and cover the lid of the cooker and cook it till 3 whistles in low flame.
  4. After that open the lid of the cooker and then add the milk and saffron milk in it.
  5. Then add the brown sugar and roasted dry fruits in it.
  6. Mix it well and prepare custard powder and milk mixture and add it to the pudding.
  7. Allow it to boil for 2minutes and then add the cardamom powder and mix it well and switch off the flame.
  8. Now your pudding is ready. Refrigerate it for sometimes and serve it in chilled condition.
  9. Garnish with some pistachios and serve.
