Vermicelli kheer or seviyan ki kheer is one of the most popular of recent trending meals in the world. It is easy, it’s quick, it tastes yummy. It is enjoyed by millions daily. They are fine and they look fantastic. Vermicelli kheer or seviyan ki kheer is something which I’ve loved my whole life.

To begin with this recipe, we have to first prepare a few ingredients. You can have vermicelli kheer or seviyan ki kheer using 12 ingredients and 10 steps. Here is how you cook it.

The ingredients needed to make Vermicelli kheer or seviyan ki kheer:
  1. Prepare 1 cup =250 ml
  2. Prepare For roasting:-
  3. Prepare 1 tbsp ghee
  4. Take 2 cloves lavang (optional)
  5. Prepare 1 cup sevian or broken vermicelli)
  6. Prepare For making vermicelli kheer:-
  7. Get 1 litre milk or 4 cups milk
  8. Prepare 7-8 tbsp sugar. Add more or less for your preferred sweetness
  9. Get 1/2 tsp cardamom powder
  10. Take 1 tbsp chopped cashews
  11. Get 1 tbsp almond slices
  12. Get 1 tbsp golden raisins

Seviyans are thin long strings that looks very much like spaghetti however process if different. Use a nonstick or heavy bottom frying pan to make a seviyan kheer. Add the seviyan and roast them for about two minutes on medium low heat. Seviyan Kheer (aka Vermicelli Kheer) is a sweet milky pudding made with vermicelli, milk and butter (or ghee).

Steps to make Vermicelli kheer or seviyan ki kheer:
  1. Heat 1 tbsp ghee in a heavy bottom pan.Add 3 lavang.Fry it for 2-3 seconds.
  2. Add the broken seviyan. Stir &continuously roast seviyan on a low to medium-low flame.Roast till the sevian strands turn golden brown
  3. Reduce the flame to it's lowest &slowly pour milk in the pan.Mix it well, simmer milk on a low to medium-low flame.Stir ocassionally so that milk does not stick to pan.
  4. Let the milk come to boil.After boiling add sugar.Mix very well so that all the sugar dissolves.
  5. Next add almonds &cashews.Mix well
  6. Then add cardamom powder.
  7. Cooks the kheer for 4-5 min more till the vermicelli gets cooked.when the kheer has cooked well it will also thicken &look creamy.switch off the flame & then add raisins.
  8. Serve vermicelli kheer hot, warm or chilled. Garnish with chopped cashews & almond while serving.Do note that on cooling the kheer will thicken.
