Remove brown skin of coconut and grate it.Add it to boiling sago kheer and boil till thick.Sprinkle cardamom powder.Allow the kheer and pineapple to cool completely.Spread a layer of pineapple at bottom of a glass bowl.Then pour the sago kheer.Garnish with raisins and caramelised pineapple on top and serve chilled pineapple delight.

Add sago, coconut milk and colouring, and bring to a boil again. Cover with lots of water and bring it to a boil. Sago cooked in coconut is Malaysian in origin (gula melaka), but a light and refreshing simplified version is often sold at Japanese sushi restaurants in Australia. Place sago in a large bowl and add the coconut milk. The coconut milk should be almost twice the volume of the sago.
