Choshi payesh is an age old tradition of making payesh(kheer) with handmade rice flour dumplings.process of making Choshi is cumbersome and is getting. To make Choshi: ¼ cup rice flour ¼ cup boiling water( keep ready ½ cup boiling water, don't pour all the water at a time, save ¼ cup of water, and add if required). Choshir Payesh is a tiny Elliptical shaped Pithe either prepared with a paste of Rice flour or all-purpose Flour and then cooked with milk and jaggery and is a famous Bengali Winter delicacy prepared during.

  6. Take 1/4 cup chopped pista
  7. Get 2 bay leaves
  8. Take 1 tbsp ghee

Instructions to make Choshi payesh(kheer):
  1. Mix bombay with rice flour and sieve the mixture.
  2. Add hot water to flour and make a dough.
  3. It must be hard dough.
  4. Make choshi by using hand.
  5. Little dry the choshi. Heat ghee and lite fry the choshi.
  6. Boil the milk and reduce to 750ml
  7. Add fried choshi in the boiled milk.cook for five minutes.
  8. Add(lite) burnt bay leaves and sugar. Stir very carefully.
  9. Add khejur gud and cook for 1-2 minutes.
  10. Keep aside for cool. Can be eat hot, but we like to have it cool.
  11. Sprinkle chopped pista and serve choshi payesh or kheer

Rice kheer or Payesh in Bengali is a delicious Indian sweet made with milk. This Bengali Payesh is also a variant of this milk and rice kheer. Here, long-grained rice is cooked in milk and flavoured with classic Indian spices like cardamom and saffron. In Bengali language payesh means kheer or payasam. Nolen gurer payesh is a delicious rice kheer or rice pudding made with date palm jaggery Date palm jaggery gives a rustic earthy flavor to the kheer.
