  6. Prepare 5 nos pista + few for garnish
  7. Prepare 1 pinch saffron
  8. Take For jalebi
  9. Take 1/2 cup all purpose flour
  10. Get 1 tsp corn flour
  11. Get 1/4 tsp baking soda
  12. Get 1 tsp yogurt
  13. Prepare 5 tbsp water, or as required
  14. Make ready 1/8 tsp turmeric powder / haldi / yellow food colour, optional
  15. Take For sugar syrup
  16. Get 1/4 cup water
  17. Take 1 cup sugar
  18. Make ready 1/4 tsp cardamom powder

Thandai Kulfi-A creamy, tasty and chilled thickened milk kulfi made with exotic flavors of Thandai. What can be better to enjoy both Indian sweet and frozen I made this Thandai Kulfi last month when I made a few batches of the Thandai masala and used it up in few of Indian and fusion desserts. Thandai Kulfi is a delicious recipe that is similar to the Kesar Pista Kulfi with a slight twist. I had made Thandai for holi and had a lot of the Thandai masala remaining, and hence decided to make it into a Kulfi and that's how the Thandai Kulfi Recipe was born.

Steps to make Thandai kulfi with jalebi:
  1. For jalebi:- In a mixing bowl, mix maida, corn flour, curd.
  2. Mix well in round circular directions for 4 minutes. Now add baking soda and give a gentle mix. Now pour this batter in the tomato ketchup bottles carefully.
  3. Heat oil in a pan and add 1 tbsp of ghee. - Squeeze the bottle and make round spirals with the batter. - When1 one side is partly cooked, turn over and fry the other side. Then immediately drop the fried jalebis in the warm sugar syrup for 30 seconds.
  4. Grind together sugar, almonds, pistachios, saffron and cardamom together to a slightly coarse mixture and set aside. Boil milk in a pan. - Simmer for 15 mins till it milk reduces. Stir in between to avoid burning at the bottom.Now add nuts sugar mixture.
  5. Add khoya and cook for few more mins. Malai will start collecting. - Scrap the sides and keep cooking till the mixture is thick and creamy.
  6. Keep cooking. Cool down completely.Then pour it in kulfi moulds / popsicle moulds. - Wrap with silver foil, insert icecream stick and freeze for 6-8 hrs atleast, I always freeze it overnight.Then show the popsicles side part under running tap water. Slowly remove the kulfis and serve.
