Three perfectly moist, almond-and-vanilla-infused cake layers are brushed with a coconut-milk mixture, layered with an incredibly special frosting and sprinkled with toasted coconut flakes for a gorgeous end result. Instructions to make Coconut vanilla cake:
  1. Preheat oven to 180d,,grease and dust your baking tin
  2. Measure all your ingredients and set aside. Cream in butter and sugar until pale and Fluffy,, add eggs one by one and continue beating until its well mixed.
  3. Add the extract and desiccated coconut and mix,, add the flour and little milk until all the mixture is well incorporated
  4. Put your mixture in the greased tin and cook for 45-50mins or until cooked,, a skewer should come out clean if inserted in the cake,, the cake is cooked. Let it cool and decorate it or serve it that way.

This coconut cake was originally an Easter project four years ago, and it was a big hit.
