  3. Make ready lukewarm water

  10. Make ready water

  12. Prepare brandy

After finding a tart pan in the kitchen cabinet, I came up with grand plans to assemble a strawberry. The filling of this tart ends up a like a gorgeous, sweet, coconut macaroon. Perfect with a dollop of whipped cream. Coconut tarts are a delicious sweet treat that can be enjoyed any time.

Instructions to make Coconut Tart:
  1. Preheat the oven to 180*c and grease a 25x18x3 cm ovenproof dish or 20 cm round pie dish. Beat together the eggs, sugar, water and margarine. Sift together the flour, baking powder and salt and add to the egg mixture. Add the coconut and mix. Turn the batter into the prepared dish and bake for 30 minutes or until golden brown.
  2. Syrup : Boil the water and sugar for 5 minutes. Add the brandy and remove from the heat. Pour over the tart as soon as it comes out of the oven. or cold.
  3. Serve lukewarm. Makes 1 medium pie

They have a soft filling and are crisp on the outside; they are perfect as an entrée. Make the coconut tart shells and blind bake. Press pastry dough into the tart moulds. If your tart moulds are not non-stick, remember to grease the base and sides generously with butter. Unlike coconut bake, tart is on the sweeter side.
