OH MY GOSH, a local restaurant serves delicious coconut cookies that taste like these! I have been looking for the recipe. Baking is like a hobby for me, so after a little tweaking, I think I have created the PERFECT COOKIE for my family!

The ingredients needed to make Coconut cookies:
  1. Make ready 2 cup sweetened shredded coconut
  2. Make ready 1 1/4 cup all-purpose flour
  3. Get 1/3 white sugar
  4. Prepare 100 grams chilled unsalted butter cut into small pieces
  5. Take 1 pinch salt
  6. Get 2 tbsp whole milk
  7. Take 1/4 tsp baking powder
  8. Prepare 1/4 cup cornflakes (ex.: Special K)

In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Beat in vanilla and eggs until well blended. These may be my favorite cookies of all time! If you like chocolate and coconut together I think you'll love this cookie.

Instructions to make Coconut cookies:
  1. Separate coconut in two equal parts in two bowls and set one apart. Preheat oven to 180 C degrees.
  2. Put one of the coconut, sugar, salt and baking powder into a blender and blend until it's soft.
  3. Set on the empty bowl. Cut the butter into small pieces and mix with your hands until fully integrated.
  4. Blend the cornflakes and add to the butter mix. Mix with a spoon and add the flower. Once.it's integrated add the milk and mix again.
  5. Grease the oven tray with butter and sprinkle some flour or use a baking sheet. With a tablespoon take the batter and flatten it by hand. Cover them wiht the coconut you set previously apart.
  6. Bake them for 20-25 minutes or until golden brown.

The ingredients are really fattening (and I make it worse by adding a bit more coconut) but so moist and delicious. I've made them for family members and they still are raving. I may even add some more oatmeal and coconut so that the cookie has more substance. In my opinion this is a great base for you to make alterations until it suits your taste. Coconut Notes: I used unsweetened coconut because the cookies already have a lot of sweetness, but either type works.
