The ingredients needed to make Dudh Puli/Kheer Puli:
  1. Make ready 2 liter full cream milk
  2. Make ready 2/3 cup rice flour
  3. Take 2 tbsp semolina/ suji
  4. Get 2 cups grated coconut
  5. Take 3 cups patali gud/date palm jaggery

Dudh Puli or Doodh Puli is one of the most famous and delicious Pithe Puli prepared in Bengal during Makar Sankranti celebration. It is a very unique styled stuffed dumpling of Bengal. The stuffing is generally made of coconut and date palm jaggery and the shell is made of rice flour. Dudh puli can be described as rice flour dumpling with coconut filling, cooked in cardamom and cinnamon infused milk.

Steps to make Dudh Puli/Kheer Puli:
  1. In a pan add grated coconut & cook on slow flame.
  2. Add 1/3 of the patali gud/ date palm jaggery & cook until the mixture reduces to 1/3.
  3. Keep stirring.Then switch of the flame & transfer the mixture into a bowl to cool down.
  4. Meanwhile in a kadhai mix rice flour & semolina with hot water by stirring continuously & make a soft dough like consistency.No lumps should be there.
  5. Transfer the rice flour, semolina mixture to a bowl, mix well to form a dough.
  6. Cut the dough into equal 20 pieces & make small balls.
  7. Take a ball & flatten it using your palm & finger & place 1 tsp of coconut, jaggery stuffing in the middle.
  8. Seal from both sides designed it with a fork & give the puli. A shape of half-moon. Make all the pulies.
  9. Take the milk in a deep bottom vessel & start boiling it. Until the milk reduced to 2/3.
  10. Now take one cup boiling milk & mix jaggery with it. Add this mixture to the boiling milk & mix well.
  11. Now add the pulis one by one into the boiling milk & cook for few mints till the milk thicken.
  12. Once the desired consistency reached, switch off the flame. Wait to cool & then serve the delicious dudh puli & enjoy.
