  2. Make ready 1 sleeve of graham crackers, 10-15 vanilla sandwich cookies, 1/3 cup sugar, 1/2 stick of butter or margarine

  5. Get 1/3 cup sugar
  6. Get 3/4 cup key lime juice
  7. Take 14 oz can sweetened condensed milk

Melt the butter in a small pan and stir in the crushed biscuits. Put the cream cheese, icing sugar and lime zest in a bowl, then beat with an electric mixer until smooth. Tip in the double cream and continue beating until completely combined. Spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles.

Steps to make Key lime cheese pie:
  1. In a ziplock bag with a rolling pin or in a food processor grind the graham crackers and cookies down to crumbs. Add sugar, stir. Add melted butter and stir til all crumbs are coated and put into a pie dish. I use my trusty metal 1 cup measure, sprayed with Pam, to tamp down the crust. I do t like mine baked.
  2. In a large bowl, mix cream cheese and sugar with a mixer. Mix til smooth. Add sweetened condensed milk and key lime juice and mix til smooth. Pour into prepared crust and refrigerate for 2-3 hours OR put in the freezer for about an hour then put in fridge.

To serve, whip the cream until it just holds stiff peaks. Zesty, easy and better than cheesecake. The original key lime pie is made with - it is in the name - key limes, a smaller and tangier version of a normal lime.
