  4. Scatter half the potatoes over the bottom of the pastry, then put half the salmon strips on top of the potatoes. Pour over half the egg mix, then repeat.
  5. Cover with cheddar cheese. Bake for 25 mins until the top is lightly coloured and firm to the touch. Cool for 15 mins before serving.

In a bowl, beat together the eggs, dill, crème fraîche and nutmeg until well combined. Put a baking sheet in the oven. Wilt the spinach in a pan over a medium heat, then squeeze out the excess liquid. Pour the cream over the top. For our first course, we had the best smoked salmon appetizer I've ever tasted in my life — crispy potato cakes topped with a mixture of smoked salmon, capers, and green onion, and then drizzled with sour cream.
