A cousin to the traditional pavlova, a pavlova roll takes a fraction of the time to bake, is less sweet and lighter in texture… so perhaps a distant cousin!

The ingredients needed to make pavlova roll:
  1. Get 4 egg whites
  2. Make ready 3/4 cup sugar
  3. Take 1 tsp vanilla extract
  4. Get 1 carton cream whipped
  5. Get 1 can crushed pineapple or drained mixed berries

Grease sides of a sponge Roll tin,line the bottom with baking paper. Roll up the pavlova and fruit. Cover the rolled up pavlova, covering it all. This pavlova recipe is easy and can be made within an hour.

Instructions to make pavlova roll:
  1. pre heat oven to 130 degress celsius
  2. line the back of a baking pan with baking paper and grease lightly with butter
  3. whip egg whites and vanilla till soft peaks form then add sugar slowly bit by bit beating well with each addition when allsugar is added keep beating until sugar is dissolved and egg whites are thick
  4. spead egg white mixture on paper in a rectangle like a swiss roll bake for about 20 mins you want the top lighly brown but not hard its more like a marshmellow,when done cool on pan
  5. when cold fill with whipped cream and well drained pineapple or mixed berries roll like a swiss roll , you may need to use a knife to assist the rolling as it can stick a little (I find that makes it easier ) roll onto serving plate and dust with icing sugar if desired
  6. if using mixed berries simmer the reserved liquid with sugar to make a sauce to serve with it

A fantastic way to showcase whatever fresh fruits are in season, or you could even use tinned. People are so impressed by it because it is. The beauty of this recipe is that you have the delicious taste of a pavlova with a much shorter cooking time. Cover the pan with a sheet of baking paper. Make sure that the sheet is big enough that it overhangs.
