The ingredients needed to make Poha/Aval Kesari (flattened rice dessert):
  1. Take 1/2 cup Poha/flattened rice
  2. Prepare 2 tablespoon + 2 teaspoon clarified butter/ghee
  3. Take 6-8 broken cashews
  4. Take 6-8 raisins
  5. Make ready 1 cup Water
  6. Make ready 1/2 cup jaggery powder
  7. Make ready 1 teaspoon green cardamom powder
  8. Get 2 drops orange food colour(optional)

So far i have made rava kesari, rava milk kesari, pineapple kesari and semiya kesari and i have a post for fruit kesari coming very soon. But never thought of making a kesari with aval/poha. Krishna jayanthy is around the corner, so when i was looking for new recipes to post in this week. Aval kesari is a very simple and tasty sweet, which you can prepare for Krishna jayanthi.

Instructions to make Poha/Aval Kesari (flattened rice dessert):
  1. Add the poha to a non stick pan and dry roast on medium heat for 3-4 minutes
  2. Take off heat and let cool completely
  3. Dry grind the poha into a course mix
  4. Melt 2 tablespoon ghee in a non stick pan
  5. Add the cashews and raisins to the pan
  6. Sauté on Low heat until cashews are brown and raisins puff up
  7. Once done, take off heat and keep them aside
  8. Add the poha now and roast for 3-4 minutes on Low heat
  9. Add water now and mix well
  10. Once lump free add 2 teaspoon ghee and mix
  11. Add the cardamom powder, colour and jaggery
  12. Combine by mixing continuously for 2 minutes
  13. Once the mixture comes together, add the cashews and raisins
  14. Mix and take off heat
  15. Enjoy warm !

It takes very less time and effort to prepare this yummy sweet. From Western India, Poha, made from flattened rice, is an easy-to-cook, nutritious snack. Kesari is a simple easy sweet dish made during any festive or auspicious occasions. Today i will be sharing a kesari recipe using red aval which is much more healthier compared to white and taste super good - to me the texture and taste resembled sakkarai pongal.
