  1. Take 1 1/2 cups -All purpose flour
  2. Get 1 pinch- Salt
  3. Prepare 1/4 cup -water Cold
  4. Make ready 1/2 cup sugar confectionery
  5. Take 8 tbsps Butter
  6. Make ready 1/2 tsp Vanilla extract
  7. Prepare 1 cup beans / pie weights
  8. Take 2 Lemon juice and zest
  9. Prepare 3/4 cup sugar
  10. Make ready 5 eggs
  11. Get 1/2 cup heavy cream

It's so smooth and creamy too, thanks to the addition of sweetened condensed milk. I'm not usually a lemon kind of girl. Fruit tarts, lemon bars, and fruity crumbles on restaurant menus will always be skipped over in. Bake a zingy lemon tart for a refreshing dessert to round off any meal.

Instructions to make Lemon tarts:
  1. First beat the butter and sugar well.
  2. Add the vanilla extract, salt and flour and combine well.
  3. Slowly add little water and combine with hands to get a perfect dough.
  4. Cover the dough with a plastic wrap and refrigerate for 30 mins.
  5. On a marble surface, sprinkle some flour and roll the dough between 2 plastic wraps to a circle such that it can cover the tart pan.(I used a medium sized pan here)
  6. Roll out the dough over the tart pan. Trim edges if needed.
  7. Now prick small holes on the crust and refrigerate for another 10 mins.
  8. Preheat oven to 350.
  9. Blind Baking-Cover the crust with a parchment paper and put some beans on top and bake till you get a lightly golden crust.(not more than 15 min)
  10. Remove the beans and keep the crust pan for cooling.
  11. For the filling, cream together the eggs and sugar well.
  12. Add the heavy cream and mix well.
  13. In another bowl take the lemon zests and juice of two lemons.Keep for 2 mins.Then strain the juice into the filling mixture.
  14. Combine the lemon juice and cream well.
  15. Now pour this filling into the crust pan.
  16. Bake for 30 mins till the custard is cooked.
  17. You can cover the crust edge with foil so that it doesn't get burnt.
  18. Serve the lemon tarts with some sugar dusted or a dollop of whipped cream.
