Qatayef or katayef (Arabic: قطايف ‎, [qā'ṭā:īf] ()) is an Arab dessert commonly served during the month of Ramadan, a sort of sweet dumpling filled with cream or nuts. It can be described as a folded pancake. Atayef or Qatayef are Middle Eastern pancakes that are filled with white cheese or nuts then fried or baked, and soaked in a rose sugary syrup.

Katayef is one of the most favored of recent trending meals on earth. It’s simple, it’s quick, it tastes yummy. It is enjoyed by millions every day. They are fine and they look fantastic. Katayef is something that I’ve loved my entire life.

These stuffed and fried pancakes are the darling on dessert table. Qatayef / Atayef or Katayef is an iconic Middle Eastern treat, made from pancakes stuffed with nuts and golden fried then dunked is thick simple syrup. Place warm water in an electric mixing bowl (I use my blender). While mixing on high speed, add the smeed mixture gradually to form a thin pancake mix.

Steps to make Katayef:
  1. Mix all dry ingredients not the baking soda
  2. Place the warm water in the electric mixing bowl while mixing on high add the dry ingredients gradually to form thin pancake mix
  3. Let it rest for hour dissolve the baking soda in 1 tablespoon warm add to the pancakes mixture and keep stirring
  4. Using electric fry pan set at 350 degrees pour 1/4 cup dough and cook like pancake on one side only remove to towel until they cool try not to touch at all
  5. Fill each pancake with nut mixture or cheese file by pressing edges together to make a semicircle
  6. Brush each on both sides with oil place on a baking sheets and bake at 400 degrees in oven for 10 minutes
  7. Dip in cold syrup
  8. You could deep fried the pancake for few minutes then dip it in cold syrup

Atayef (kataif or قطايف) are thin and lacy stuffed Arabic pancakes. What sets these pancakes apart is that they are cooked only on one side, the other side is velvety because it is covered with bubbles, this allows the flavors of the filling to permeate the atayef. Atayef are Middle-Eastern Pancakes stuffed with a ricotta cream, sprinkled with crushed pistachios and served with a rose-water simple syrup.
