Very tasty filled with almost anything you want, but this feta, and mint combination makes the fatayer. Traditionally the Cheese fatayer recipe is made with the akkawi cheese but you can make it with feta I have also shared the fatayer dough recipe here and you can use the same recipe for making.

The ingredients needed to make Cheese Fatayer:
  1. Prepare 4 cups All purpose flour
  2. Make ready 1 tsp Dry yeast
  3. Get 2 tsp Sugar
  4. Get 1/2 tsp Salt
  5. Make ready 2 tsp Soft butter
  6. Prepare 1/2 cup warm Milk
  7. Prepare As Required Warm water to make the dough
  8. Make ready 1 cup Feta cheese or as required to stuff the fatayer
  9. Get 1 bunch chopped Parsley
  10. Prepare Few Mint leaves chopped
  11. Take 1/2 tsp oregano or thyme
  12. Take As required Milk to brush the fatayer
  13. Make ready 1 tsp oil to rub the dough

These cheese fatayer are so tasty that they will appeal even to those that are addicted to meat. The combination of the salty cheese, fresh parsley, fresh mint, and nigella seeds makes the fatayer. Fatayer jenbeh or cheese pies are popular arabic pastries. Fatayer el jebneh are typically boat-shaped but you can shape the dough any way you are comfortable with, I sometimes shape them the.

Steps to make Cheese Fatayer:
  1. In 1/2 cup of warm milk add sugar and yeast and keep for 8-10 minutes to activate.
  2. In a big mixing bowl pour the flour. Add salt and butter and mix.
  3. Make a hole in the centre of the flour and pour the broomed yeast.
  4. Mix slowly with a spatula to incorporate.
  5. Now slowly add warm water to make a soft dough.
  6. Rub some oil to the dough and cover it.
  7. Keep aside in a warm place for about 2 hour or till dough becomes double in size.
  8. Meanwhile prepare the filling by combining chopped parsley, mint and oregano/thyme with feta cheese.
  9. After 2 hours or when the dough becomes double in size take out in a work place or kitchen platform and knead well by stretching and folding method.Knead for atleast 10 minutes.
  10. Divide the dough in half. Take the first half and roll into a rectangle.
  11. Spread half of the filling in the rectangle then roll to form a log.
  12. Cut the log into 1.5 to 2 inches pieces, or less according to your desire. Then brush with milk.
  13. Using a wooden stick, or back side of your laddle, make an indentation in the middle of each piece. This is necessary to give the shape I like. You can make other shape also.
  14. Place all the fatayer in a baking tray and rest again for about 20 minutes.
  15. After 20 minutes bake them for about 20 minutes (until light golden brown)in a 200 degree C preheated oven.
  16. Let them cool down and enjoy!!
