  1. Make ready 450 grams cod or haddock fillets
  2. Get 100 grams prawns
  3. Make ready 600 ml milk
  4. Make ready 40 grams butter
  5. Take 40 grams plain flour
  6. Take 3 tsp fresh chopped parsley
  7. Prepare 900 grams potatoes
  8. Make ready 100 ml cream or milk
  9. Take 50 grams butter
  10. Get 100 grams grated red cheese

Lift the fish out onto a plate and strain the milk into a jug. Chop the eggs and distribute over the fish. Scatter the prawns over the top, mash the potatoes and spread on top, and dot with a little extra butter. A wonderful dish for Good Friday and I'm very grateful to Fr Bede for the photos.

Steps to make Good Friday Fish Pie:
  1. Preheat oven to gas 5
  2. Put fish in oven proof dish with milk
  3. Add salt and pepper, bake for 15 minutes.
  4. Strain milk from fish and reserve.
  5. Flake the fish and put back in bowl, add prawns.
  6. Melt butter in saucepan and add flour, mix well.
  7. Remove from heat and slowly add reserved milk, parsley, salt and pepper.
  8. Bring sauce back to the boil while stirring until sauce thickens.
  9. Pour over the fish.
  10. Boil potatoes in salted water.
  11. Mash potatoes with milk or cream, butter and pepper.
  12. Cover fish with the mash and smooth over with fork.
  13. Sprinkle over grated cheese, bake for 20 - 25 minutes
  14. Serve with fresh garden peas and crusty bread.

Flakes of fish smothered in a creamy white sauce, topped with mashed potato then baked until golden brown, a wonderful centrepiece for Easter you can make with fresh, smoked and even canned fish. Use a combination of smoked fish and unsmoked fish for optimum flavour and texture, plus it's more economical. Generous chunks of fish in a creamy sauce made with a few secret ingredients, topped with buttery mash and a crispy garnish. Remove the fish to your pie dish.
