Using all butter will actually likely make your cake more dense and dry. The recipe is cake gold and I knew it would be the perfect starting point for a fluffy and moist coconut cake. To assemble the cake: Place one cake, domed-side down, on a platter. Place the remaining cake, domed-side up, on top.
