I used beetroot in this one, you can use carrots instead of beetroot. The only thing is you have to cook it till it leaves the sides of the pan and ghee starts to ooze out from the pan. Steps to make Beetroot Burfi:
  1. Take 1 large sized beetroot, peel off it & grate it.After grating,grind it in mixture for smooth texture of burfi.
  2. Take a non-stick pan,heat it & add one tsp of desi ghee, grind beetroot mixture in it & cook it for 3-4 minutes on medium flame.
  3. Now add 2 cups of milk,1 cup of fresh cream & cook it for about 10- 15 minutes.After some time add sugar as per taste & cook again.
  4. When mixture becomes slightly thick,add milk powder,grated coconut,elaichi powder to it & cook it for 4-5 minutes, finally add chopped dry fruits, raisins & melon seeds & mix it completely.
  5. Cook it again until entire mixture leaves the pan & forms a ball.
  6. Take any plate,grease it & spread mixture uniformly & rest it for about 1 hour.
  7. After 1 hour cut into pieces & decorate with cashew.Beetroot burfi is ready.
