Seviyan in English known as Vermicelli they are like thin spaghetti and used many different ways, making sweet and savory dishes. Meethi Seviyan - Vermicelli Kheer can be enjoyed during any festive occasion. Thin threads of vermicelli are boiled with milk, sugar and dry mawa powder until well blended and tender. Mawa powder adds that richness and flavor to this recipe but if no dry mawa powder on hand; substitute it.

Instructions to make Meethi seviyan (vermicelli kheer):
  1. Take one tablespoon of clarified butter in a pan and roast vermicelli/seviyan till golden brown.
  2. Take another pan and start boiling the milk.
  3. Add vermicelli/seviyan into the milk and cook at low heat.
  4. Add sugar, cardamom powder and saffron and finely chopped dry fruits as well. keep stirring the mixture.
  5. Vermicelli/seviyan will start absorbing the milk. you can regulate the consistency as per your liking. completely dried or semi-liquid.
  6. Garnish it with finely chopped almonds, pistachio, cashews as per your liking.
  7. Serve it hot, warm or chilled.

Meethi seviyan is a dessert made with vermicelli, sugar, ghee and nuts. It is a lighter version of the seviyan kheer and is great to serve as an after meal dessert. There are a few different ways meethi seviyan is made. It can be made with or without milk. Seviyan is the hindi & urdu word for vermicelli.
