The ingredients needed to make Paneer kheer or chanar payesh:

1. Take 3 cups full fat whole milk
2. Make ready 1/2 cup crumble chenna or grated
3. Make ready 6 tablespoons sugar
4. Get 1 teaspoon cardamom powder
5. Make ready 12-15 cashewnuts
6. Take 12-15 almond chopped
7. Take 1 teaspoon rose water

Payesh is a kind of kheer or milk pudding prepared on festive occasions like Durga Puja, Dussehra, Diwali and so on. Wherever chanar payesh is made using paneer or chana (Bengali) and milk. tastes heavenly and can be relished at any time. The best part is it is easy-to-make and made using very few ingredients. Bengali Chennar Payesh is a rich kheer made with freshly made cottage cheese (Chenna) and reduced milk.

Instructions to make Paneer kheer or chanar payesh:

1. Take milk in a wide bottomed pan or sauce pan and keep it on stove top on a low to medium flame.
2. Whilst the milk comes to a boil, crumble the paneer and keep aside.
3. When the milk comes to a boil, lower the flame and simmer the milk till it thickens a bit. For about 5 - 6 minutes. Keep stirring the milk at intervals when it's simmering. Then add sugar and continue to cook further for 5 minutes.
4. Stir and then add chopped dry fruits and cardamom powder simmer for 1 - 2 minutes.
5. Add crumbled paneer. You can also grated the paneer and add. Since I was using fresh chenna and crumbled it.
6. Simmer for 2 minutes on a low flame till the crumbled paneer gets cooked. Then add rose water and stir.
7. Serve Paneer Kheer hot, warm or chilled. While serving you can garnish the PANEER KHEER with red cherries……..

It is also called Paneer ki Kheer in North India. If you looked at the title, then at my picture, felt confused and looked up again at the title - don't worry. It does, indeed look like Rasmalai. To begin making Chanar Payesh, take fresh paneer in a bowl and mash it well with your hands to make it smooth and moist. Pinch marble sized chenna and make dumplings out of it and keep them aside.
