  2. Take 100 grms brown sugar
  3. Make ready 150 grms nolen gur
  4. Prepare 25 grms almond
  5. Take 2 tablespoons vinegar
  6. Take 1 tablespoons rice flour
  7. Get 1/2 teaspoon ghee

This is a famous Bengali sweet prepared using Chena or Cottage cheese and dates jaggery or khajur ka gud,there is no additional sugar required as we are using jaggery which is good for health as well. Rosogulla or Nolen Gurer Rosogolla are popular Indian sweets. It is known as the special sweet of Bengali and Perfect for any occasion, party and festival. There are two different types of rosogolla.

Steps to make NOLEN GURER CHENA PORA (baked nolen gur cottage cheese):
  1. I took 1ltr milk, boiled it and poured 2 tablespoons of vinegar into the milk to get 250grms of chena (cottage cheese).
  2. Strain the chena and let it cool down(generally, I half drain the water to get a smooth paste from the same).
  3. First take the brown sugar in a mixer jar and make coarse powder. Then put the chena into the mixer and get a smooth paste of it. Finally mix the rice flour with chena paste.
  4. Mix half portion of nolen gur with the paste. Chop the almonds into small pieces.
  5. Preheat the oven at 200°C for 10 minutes. Meanwhile grease an ovenproof bowl with ghee.
  6. Pour the chena into the greased bowl. Then pour the rest of nolen gur over the chena paste. Finally decorate with chopped almonds.
  7. Bake the chena at 180°C for 35-40 minutes. After baking bring it to the room temperature and serve cold with some nolen gur over it.

One is sponge white rosogolla, and the other one is nolen gurer rosogolla sweet. It is made of milk curd. Nolen Gurer Payesh Recipe is a simple, delicious Assamese/ Bengali dessert  made with rice, milk, bay leaf and date palm jaggery.
