  2. When carrot is tender and water is evaporated, add sugar. After adding, it will leave water and will require to be dried on maximum heat.
  3. When dried, add khoya ghee and dry fruits cook for 5 more min
  4. Phirni…Wash and soak rice for an hour. - - Drain the water and blend the rice in a blender to make a coarse paste
  5. In a heavy bottom pan, add ghee - Add the rice and to the milk.Simmer the heat and cook till the milk is reduced to 1/2 and phirni has reached the desired consistency.Add sugar and rose water.
  6. Assemble…soread carrot halwa in bootom of the serving dish then phirni.keep in the fridge for 1 hour or till it is set.apply vark decorate with dry fruits.

This simple dessert can be made in a variety of ways and served hot or cold. In this recipe, seasonal carrots are grated and sauteed in melted Ghee or clarified butter and cooked together with reduced Milk Sugar. Once semi cooked, Khoya or milk solids are added together with dried fruit and nuts. Add the carrots, milk and water to the pot. Open the valve to quick release any remaining pressure.
