  7. Get 1.5 tbsp instant coffee

  9. Make ready 100 ml heavy fresh cream
  10. Get 1 tsp instant coffee powder
  11. Take 1/2 tsp vanilla essence
  12. Take 90 gm granulated sugar
  13. Get 55 ml water
  14. Get for coffee caramel butter cream
  15. Take 4 tbsp coffee caramel cream
  16. Prepare 100 gm soft butter
  17. Get 150 gm icing sugar
  18. Get FOR ALMOND BRITTLE:
  19. Prepare 125 gm granulated sugar
  20. Take 60 ml water
  21. Prepare roasted crushed almonds

To do this, I take a small cut from the cupcakes and spoon in a small dollop of caramel then pop the cake back on top. Once done on all cakes, pipe the buttercream on the cakes in a swirling motion. With the piping, it will get easier the more you practise so just keep going with it. The cupcakes are flavored with some instant espresso coffee powder dissolved in a little hot water.

Steps to make COFFEE CARAMEL CUPCAKES!:
  1. FOR COFFEE SPONGE: beat butter and sugar with electric hand beater for until become light and fluffy.then add eggs and coffee and beat for another 5 mins until sugar dissolves completely.now fold gently sifted flour and baking soda for about 3 mins but don't over mix.now pour the mixture in the cupcakes pan and bake it in the preheated oven at 170C for 20-22 mins.
  2. For Coffee caramel cream:heat the cream of low flame DON'T BRING TO BOIL.just heat it a lil' then remove it from the stove and add coffee powder and vanilla essence and mix gently until everything mix easily together.now in a heavy bottom sauce pan add sugar and water and heat until all the sugar dissolves and becomes amber/light golden brown in colour.now pour your coffeecream mixture to this and mix quickly until everything combines seemlessly.now put it aside at room temperature
  3. FOR ALMOND BRITTLE:it's very simple heat your sugar and water mixture together until reaches to dark amber colour then pour it over a silicon mat of steel plate and add roated almonds and let it completely cool dowb for 1/2 an hour. then break it into small pieces.
  4. FOR COFFEE CARAMEL BUTTER CREAM:whisk your butter until it becomes pale and fluffy then add your icing sugar 1/2 batch at a time and whisk until it all becomes smooth and fluffy now add your coffee caramel cream to it and whisk again.it's done.
  5. Finally when your cupcakes are ready make a hole in the. center of each cupcake and add coffee caramel cream the do buttercream frosting on top and add some almond brittles.

Using regular coffee won't give them a strong enough flavor to really taste it. The espresso mixture is more concentrated and gives just the right amount of coffee flavor. Adding a little salt allows you to up the amount of coffee included (so giving a stronger flavour) without the cake getting bitter. Switching out the caster sugar in favour of light brown sugar also helps to bring out the coffee flavour. Brown sugar has a hint of caramel and caramel and coffee are match made in heaven.
