  1. Make ready 21/2 cups a.p.f

  7. Take 3/4 cup butter
  8. Get 1 cup butter
  9. Take 1 lemon zest
  10. Prepare 2 cups mixed berry(used black berry, raspberries, strawberries)
  11. Get 2 tbsp a.p.f

My love for mascarpone started when I discovered mascarpone ice cream quite a long time ago. Drain any excess juice off the berries and tip them into the base of the tin. Add the golden syrup, then spoon the cake mixture on top. Cool the cake in the tin, turn out and remove the paper.

Steps to make Mixed berry cake:
  1. Sift dry ingredients
  2. In a separate bowl, mix butter sugar and zest and beat till light.
  3. Add eggs and vanilla
  4. Add the buttermilk and flour alternatively.
  5. If using strawberry, cut into sizeable piece.
  6. Toss the berries with the 2 tbsp flour, then fold in the cake mixture
  7. Bake on 180°c till cooked

Take a spatula or spoon and lightly press the berries into the top of the cake. The cake should be golden and have a knife come out clean when inserted into the middle. I would consider this a typical, no-fuss Austrian berry cake. It looks and tastes especially nice with any red or dark fruit, that's why I usually make it with raspberries, blackberries, black or red currants, cherries or strawberries, or a combination of them.
