In a small bowl, combine crushed graham crackers and zest. Spoon chocolate over each key lime pie and top with. This key lime pie filling has sour cream and sweetened condensed milk and is perfect for your favorite homemade graham cracker crust. I also used Rose's Key Lime juice.

Instructions to make Chocolate Key Lime Pie:
  1. Preheat oven to 160c
  2. Finely crush the biscuits, and add the melted butter.
  3. Press firmly into the base and sides of tin and bake for 10 mins. Once finished, leave to cool.
  4. Whisk the egg yolks and gradually add the condensed Milk.
  5. Add the juice and zest of 4 limes, leaving a little zest for later.
  6. Pour filling onto base and cook in the oven for 15 mins. Leave to chill in fridge.
  7. Whip the cream and add the icing sugar until firm. Pipe the cream on to the pie and sprinkle a little leftover zest on top.

EDITED: I liked the combination of the oatmeal cookie crust with the pie filling, I just found the pie a little sweet. Made with ordinary limes, this "Key lime" pie tastes every bit as authentic as the real deal — plus it's easier to make. Ordinary limes make an exceptional Key lime pie, and they are a much better alternative to bracingly tart bottled Key lime juice. Classic key lime pie gets a fun twist, thanks to a chocolate graham cracker crust and a tangy whipped cream topping. Having never made key lime pie, I went back to research what went wrong.
