  6. Prepare 1 pinch salt

I wanted to create a homemade gelato that would be smooth and velvety with clean chocolate flavor. I started with the chocolate: I used a combination of both cocoa powder and bittersweet chocolate to insure an intense and complex chocolate flavor. The combination of bittersweet chocolate with it's high percentage of cocoa butter helped with the denseness of the gelato, and the cocoa powder. Freeze in an ice-cream maker, according to manufacturer's instructions, until gelato just holds its shape.

Instructions to make Chocolate Gelato:
  1. Bring 1 3/4 cups milk just to a boil over medium heat in a medium-sized saucepan.
  2. While milk is heating, add fresh cream and whisk untill dissolved. whisk sugar, 1/4 cup cold milk, cornstarch, and salt together in a mixing bowl until smooth. Whisk cold mixture into the boiling milk and bring to a boil over medium heat; let boil for 5 minutes on medium flame, whisking constantly until mixture is very thick. Remove from heat.
  3. Add cocoa powder into cornstarch-milk mixture. Whisk well and seive the mixture if needed. Let cool slightly, stirring frequently to prevent forming ice. Cover surface with wax paper or foil paper. Chill in a refrigerator until cold, at least 2 hours.
  4. Transfer to an airtight container and freeze in a freezer until hardened if necessary.(at least 5hours)
  5. Enjoy the Italian chocolate gelato at home.
  6. Note: Covering the mixture is very important. If you are using chocolate, make sure you powder it before using.

Some might say gelato is just the Italian word for Ice Cream. While close, that wouldn't be exactly accurate. There are two big differences between Italian gelato and American ice cream. The first is that gelato contains less butterfat; it is typically made with whole milk rather than cream (in some rare cases a combination of the two). Judged over a period of time to be of the highest quality and outstanding of its kind.
