  5. In a small mixing bowl, beat neufchatel until fluffy. Add 1/2 cup stevia mix and 3 tablespoons reserved peach syrup. Beat for 2 minutes. Spoon mixture over peaches to within 1 inch of pan edge. Mix together 1 tablespoon sugar and 1 teaspoon cinnamon, and sprinkle over top.
  6. Bake in preheated oven for 30 to 35 minutes, until golden brown.
  7. Chill before serving.

In a large bowl, combine the sugar, flour, tapioca and salt. Combine remaining cream with vanilla; add to the sugar mixture. Remove from the heat; whisk in gelatin until dissolved. In a large bowl, beat cream cheese, confectioners' sugar and milk until smooth. Spoon gelatin mixture over cream cheese layer.
